I changed my profile to be an administrator but when I do Resource Planning and try to plan the activities I only see 4 out of the 10 projects that I am assigned to.
Check that your projects are not "administrative" or "template" or under construction.
Also check your allocation profile to the projects (profile on each project may "remove" rights)
On similar topic, since yesterday (may be latest projeqtor update V12.01), I only see 1 project with the admin account, which happens to be the project I'm also the project leader. The other 15 projects are not visible in 'planning' or in 'projects' without any change in user settings. How can I see back all the projects with my admin account?

if you are an administrator do not allocate yourself to the projects. The default administrator profile allows you to see and modify all projects.
However, as Babynus explained, as soon as you are allocated to a project with a profile other than administrator, you remove your default administrator rights on this project and only have the rights corresponding to the assigned profile.
Check the profile you have on each of the projects.
...and just by chance, also check that the project selector is on all projects.
