I cannot find any instructions on how to setup to Receive Tickets from Emails.

We'll try and document the feature soon.
Concept is to define one imap mailbox, the same way it is defined in Global Parameters to read answers to email (you may look at global parameters for help).
You can define one mailbox per project and ticket type : emails received in this mailbox will be inserted as tickets in the project with the corresponding ticket type.
