Is it possible custom emails on event for project and not for role?

Do you mean send email to all project members ?
Just select "team". It will send email to all members affected to the project.
This option should be renamed as "project team" to be a hit more clear.

No, I meant to configure email send differently among project.
For example, if I create an Activity for Project "X", I would send email to Project Leader, but if I create an Activity for another Project, I wouldn't send email to Project Leader.
Is it possible anyway?
