When creating an activity or a ticket, we inform the project, we can not be directly in the project module in the paragraph related Elements, associated activities and tickets?

Yes you can.
Just select the project in the project selector (top left field)

The project screen is just to see project description, not project items.

Items of projects are not linked to the project, they are elements of the project.
Just keep in mind that project is the basis for security : all access are managed through projects.

It would really be a mess to display all items of projects in the project page.
Have a look at track database : ProjeQtOr project has 140 activities (34 active), and 1782 tickets (410 active).
Do you imagine to display this on Project Page ?
