Use of Organizations

I am quite interested by the new 'Organizations' feature, but not sure I understand everything yet

Is it possible to use Organizations as a kind of high-level global project, or is it mainly for consolidation that it can be used ?

In short, we tend to use a lot of projects / sub-projects when we have large teams on long-running projects, and of course this adds a lot of calculations because each sub-project creates additional checks for access rights, affectations, etc. So I'm wondering if the Organization can be used to manage affectations on a high level, to remove the multiple checks on sub-projects ?
