hello,

Would it be possible to make projects that are in "paused" status invisible as it is possible to do with closed elements?
By a display trick or by customizing the workflow?

no. We have not planned this option.
It is not planned on the roadmap either.

You can also use custom filters an, for example, name it "mask paused projects".

Yes but if only the project is on "paused" and if there is some other element no on paused (activity for example) the project is not masked...
