Yes, but only on V5.3.
It is defined on each profile, as restriction of types.

Hello

Yes with version 5.3.0, for each profile i can make restriction of type of activities,actions, document, ... but not project

No, you're right.
As restriction also exists (and was initialy designed) to restrict types per project type, Project type restriction is not available through profile.
If should be added in next version.
