Hello Sir/Madam, I would like to block the "rest" field in the "account assignments" screen. Is it possible to set the blocking of this field for a given user profile or not? Or else is it possible to create an alert with the user name, the value before the modification, the value after the modification and the date when this field is modified?

No,none is possible.

What is possible is to forbid assignment change.
This can be configured in specific access acreen.
