Perhaps this is something we as noobie users could work on?
My thinking would be:
as you are working through the setup and and and
one takes notes. At some point in time this interested group collects the notes (comments whatever) and then produces some kind of document.
This might be the blind leading the blind but in the Open Source universe participation is encouraged and this is one place that someone without previous background or intimiate knowledge of the software actually could be a great help.
If nothing has been done yet I've been working on a basic guide just for the project planning part of this for my university. It doesn't get into tickets or real work for example. But I'd be happy to share it although it is currently detailed in French (and I'm not sure I can be bothered translating it myself). I should probably get approval first as all uni work technically belongs to them though. Would the forum be the best place to share it though?
be careful Zoe do not post it before getting the final evaluation results from your university since they might check for plagiarism (through Turnitin for example) and even if you are the source of the public information they may consider it as self-plagiarism (autoplagiat).

I haven't gotten around to translating the document but I can post what I did in French. Maybe someone else will get around to translating it before me... It details most of project management in the sense of ordering tasks to be complete, and touches on real work completed and task progress. It was only done in Word (I know, I should have done it in LaTeX or something else probably...) but I would happily share a different format if that would allow collaboration to complete certain aspects or easier translating, just tell me what format and where
