Ok, but to re-eavaluate, I change the assigment work for each ressource or I change the work on the progress task section?

You cannot change left work in the progress section.
You can change left work :
=> in the Real Work Allocation screen : each resource should re-evaluate left work.
=> in the assignment definition : tjhe project leader can update left work if needed

And why I can't closed an activity with left work (in my understanding, this case happens when a ressource has finished his activity before the plan work)?

When resource has finished work before plan, he must set left to zero, to tell the planning calculator that there is no much work to do.
This will adpat re-assessed work.
And you will thn be able to close the activity.

As a project Manager, can I choose the day to validate the Real Work Allocation(RWA)? For example, every member submit his Real Work Allocation every day at 8PM, what's happen if (as a project manager) I want to validate this RWA two days later without "un-summit" the d-day (today), is it possible?

No, you validate the whole week.
